This is a classic old-fashioned Southern-style giblet gravy made with the addition of hard-boiled eggs. If you prefer a gravy without eggs feel free to leave them out. Use this recipe to make a delicious gravy to accompany your Cornish game hen or roast turkey.

Normally when you buy a whole turkey or chicken the giblets come in a bag deep in the cavity of the bird. Thaw (if necessary) remove the bag and use as directed in the recipe. Sometimes there is more than one bag so check the cavity carefully.

Depending on the manufacturer the bird's packaging will indicate whether the giblets are inside the bird. However there are cases where the giblets have been removed and are not in the packaging at all. If you buy from a farmer it is almost certain that you will find the giblets inside the bird.
