This has become our favorite fish recipe. Besides being delicious it is also a quick and easy recipe. We use black cod (American name) or sablefish. Pollock can also be used. A while ago I found a similar recipe in a supermarket; it was good but needed some adjustments. I basically reduced the tomato sauce increased the parmesan reduced the mustard sauce and adjusted the cooking time. In our opinion these changes created a better balance of flavors. Despite serving four people we found that a pound of black cod is about the right amount for the two of us. Serve with Pinot Gris and French bread.
