When you think of a good pickle eggplant isn’t one of the vegetables that immediately comes to mind. In fact the hierarchy of pickles hovers somewhere after kohlrabi and just before kale.
Even I came to the eggplant pickle reluctantly and usually I run to embrace a pickle I haven’t yet tried. I just couldn’t imagine how a barely cooked eggplant would translate to a pickle especially since I was convinced it would be terribly spongy. But with two purple eggplants to use up for a trip and a deadline looming I decided to give it a try.
