How to Prepare Homemade Green Olives in Brine

Olives cured in brine are an ideal salty snack and an essential ingredient in a variety of dishes. They are available for purchase but often expensive. Making them at home is a simple process that requires nothing more than time water vinegar and salt. Whether you have an olive tree or have access to fresh olives at a good price this simple recipe makes flavorful cured olives to use in appetizers salads or pasta dishes among many other recipes in which olives shine. These olives are especially delicious when served with dry salted olives for a pleasant contrast of flavor and texture.

The initial water and salt curing process is similar to making lacto-fermented foods and it is very close to the process used to make Kalamata olives. By soaking the olives and changing the water daily and then brining them in several changes of brine you wash out the bitter compound oleuropein which makes raw olives inedible.

Because this is time-consuming you should start sowing your olives about eight weeks in advance of when you want them ready. Jars of homemade olives make great gifts and they will keep for months so you can enjoy tasty olives all year round.
