As spring begins in the Northeast we may be just finishing up digging out the last snowstorm of winter but daffodils are starting to sprout and both plump asparagus and pencil-thin varieties are at the forefront of the market. Even though we won’t see the local beauties for a few weeks or so we just can’t resist. We’re ready to jump into the new season.

For lunch at Canal House our test kitchen and photography studio in Frenchtown New Jersey we decided to take the thickest asparagus we could find and pair it with chicken. Both ingredients were poached to keep the flavors soft and clean. For the sauce we wanted a twist on a classic green goddess tossing the delicate and tangy dressing into soft whipped cream. We planned to serve the chicken and asparagus warm but knew that if the afternoon dragged on it would still be delicious at room temperature.
