Over the past few months I’ve been working my way through Molly Baz’s Cook This Book. One recipe in particular immediately caught my eye: Poached Fish with Creamed Leeks and Hazelnuts. The technique involves infusing heavy cream with fragrant savoury ingredients and then poaching the fish in the flavoured liquid.
Although the dish sounded delicious I was looking for something a little more lactose intolerant and then I remembered one of my favorite Thai soups: tom kha gai.
