I am a fan of shortbread. I love the crumbly buttery goodness of shortbread. It is even pretty and trendy when poppy seeds are added to the mix. I do not recommend using a hand mixer unless you are extremely careful with the flour and powdered sugar. Note: This recipe uses a shortbread pan.
