When the weather gets cold there's nothing better than a warm bowl of potato soup. Potato leek soup is a classic and so easy to make!
To make this soup cook chopped leeks in a little butter and add potato stock cubes and herbs. Bring to a boil and simmer until potatoes are tender about 20 minutes. Puree soup in a blender until creamy.
You can use either Yukon gold or Russet potatoes for this soup. Yukon golds provide a creamier texture and for that reason I recommend them over Russets but either will do. Red-skinned waxy potatoes are not the best for a soup like this because they hold their shape. In this soup you want a potato that mashes well.
