In my family we say “Happy Sangibing” instead of “Happy Thanksgiving.” If you say it out loud and listen carefully you realize that “Sangibing” sounds a lot like “Thanksgiving” which it is only in a heavily accented Cuban Spanish-to-English. That’s what assimilation sounds like. And I guess that’s how I feel about assimilation or rather adaptation.
As a Cuban by way of Panama and now New York City my Thanksgivings growing up with my mother and older sister were always a mix of my Latin and American upbringings. In addition to the wobbly canned cranberry sauce which was more ceremonial than edible and green bean casserole (an American dish I love) we ate congri (rice and black beans) mojo (roast pork) and pulpeta.
