This Jerusalem artichoke recipe is a super easy way to cook them if you’ve never tried them before. They’re by far my favorite. Jerusalem artichokes or Jerusalem artichokes are starchy tubers like potatoes and turnips. When roasted the skin becomes flaky and the flesh tender but the flavor of a Jerusalem artichoke is slightly nutty and sweet. Cooked Jerusalem artichokes are best eaten within 2 days. Raw they store well in the crisper drawer of your refrigerator wrapped loosely in a paper towel.
