When I cook fish at home I like to do it in a hot oven. It is a pure nostalgic impulse: my mother prepared a fish meal every Friday of my childhood. After I got over my disappointment about not having any frozen fish sticks left I fell in love with my mother's simple recipe: fried fish fillets with well-seasoned breadcrumbs and some good olive oil.
This easy fish dinner gets sweetness from a red onion freshness from mint and basil and heat from a splash of red wine vinegar. Anchovy paste gives the dish a deep savory note while olives add a touch of richness.
