I learned about carrettiera sauce when I was working for chef Cesare Casella. He had me comb through old Italian cookbooks from the Maremma Valley an area that stretches along the country’s west coast from northern Lazio (Rome’s home region) to southern Tuscany for a new restaurant he was opening.

The story behind the recipe is that it was invented by the carrettieri cart drivers who over a century ago traveled from town to town selling everything citizens might need. Cooking and eating on the go required ingenuity and they made easy pastas with ingredients they had in their carts that would keep for a long time.
