How to Make Delicious Oven Baked Chicken

The distinction between roasting a whole chicken and baking chicken pieces is important for this recipe. With a roast chicken try to get the bird up as much as possible using a roasting pan with a rack. That way the hot dry air of the oven cooks it creating a beautifully crispy skin while keeping the meat juicy.

Because the chicken is cut into pieces and the pieces lie flat in a baking dish the dish conducts the heat directly to the bottom half of the chicken which is different from air. You get the sizzling fat on the bottom which makes it deliciously crispy on the bottom. Fried chicken is also cooked at a lower temperature for deliciously juicy meat. A chicken prepared this way is therefore somewhere between roasting and stewing.

Another difference is that a fried chicken is usually dipped in seasoned flour before cooking which we don’t do when roasting a whole chicken. Feel free to add more spices to your flour mixture if you like it spicy.
