My idea of a vegetarian Thanksgiving goes something like this: seasonal acorn squash stuffed with a quinoa and kale stir-fry kicked up a notch with scallions tangy feta sweet currants and toasted pumpkin seeds. A colorful and hearty meal that doesn’t compromise on flavor. With all the great produce this time of year who really needs turkey and mashed potatoes? (I’m just kidding don’t answer that question…)
