I have made countless quiches and my biggest complaint was that while it is generally a healthy dish the number of calories from fat was quite high. So off to the kitchen with a mission! Here it is: a crustless quiche with less fat and still delicious for a lean lunch.

3 tablespoons unsalted butter

170 grams of mushrooms finely chopped

3 tablespoons minced garlic
