It was a gradual creeping change. Year after year I adopted each dish of Thanksgiving dinner one by one except for the out-of-season asparagus that my mother insists on. At this point I had settled on a menu that graces the holiday table every year a series of dishes that I consider a family tradition. So it was a surprise when a request came to transform this comforting and familiar dish into something new this year.
As a man of tradition it’s a little exciting that sweet glazed ham will replace the roast turkey macaroni and cheese will take the place of the cornbread and sausage stuffing and Brussels sprouts and bacon will take over for my green bean casserole. When I asked what we should do instead of mashed potatoes my sister made it very clear that those weren’t going anywhere. Still I couldn’t help but wonder how I would replace them and thought these pimento cheese twice-baked potatoes would go nicely with them.
