The original recipe for this Canadian Bacon Casserole is delicious but this is my healthier version that’s lower in fat and calories. As a single parent I can’t eat eight servings at a time so I wrap and freeze individual portions. It’s great to have on hand for family visits—just heat up each person’s portion when they show up for breakfast. It’s also great if you’re in a rush in the morning and don’t have time to cook before work.
