Another week another fridge drawer filled to the brim with garden courgettes. Sound familiar?
To deviate from our usual (almost daily in the summer) way of preparing zucchini (see mom's summer squash) we made a classic French gratin with grated zucchini spinach onions fried with bacon a parsley and garlic persillade all bound together with a few eggs mixed with Parmesan cheese and baked until golden brown.
Zucchini never tasted so good!
