Cinco de Mayo is my favorite food holiday of all time: there can never be enough Mexican or Tex-Mex in my life. Most of the Mexican food I know I learned from Rick Bayless's Mexican Everyday on Amazon which I've used so often that it's less a book than a bunch of loose pages with a broken spine. Luckily I've memorized most of my favorite recipes like this incredible red enchilada sauce.
It’s the process that develops the deep rich flavors of this sauce. It starts with roasting moderately spicy guajillo peppers followed by pureeing them with garlic tomatoes cumin and black pepper. The sauce is then strained into a pot of hot oil and cooked until it forms a thick paste. Here’s the messy part: as the sauce thickens it also tends to splatter everywhere. Constant stirring helps combat this but doesn’t completely alleviate it… you’ve been warned. Finally chicken stock is added the sauce is seasoned and simmered and it’s done.
