Red Pozole – Meaty Mexican Bone Broth & Hominy Soup/Stew – Food Wishes

I love tacos and burritos more than anyone else which is why I don’t have a long history of eating pozole. The few times I’ve had it I’ve loved it but no matter how great a particular Mexican restaurant’s version was supposed to be I almost always ended up ordering my usual tacos al pastor or carnitas burrito. Since that habit is impossible to break at my advanced age I think I’ve found a compromise.

I still enjoy tacos and burritos when I eat out but when I’m craving comforting Mexican fare at home which is often I’ll occasionally make a big pot of pozole. This incredibly hearty soup or “stew” is super easy to make if you’re using as much meat as I am but it’s also quite time-consuming especially if you’re using lots of bone-in pieces like I did here with the pig’s trotters and shanks.

You can make a quicker lighter version using only pork but I think you’ll miss out on all the rich gooey goodness of those chunks. Just make sure you have plenty of toppings ready to serve with it because that’s a big part of the fun.
