Rhubarb is delicious and deserves to be used in as many ways as possible. Norwegian rhubarb pie the absolutely magnificent rhubarb meringue pie and now this rhubarb frangipane pie. It is very quick to make and is to put it mildly out of this world delicious.

The frangipane or frangipane cream may sound extremely refined and delicate but it is simply a mixture of eggs butter sugar ground almonds and a little flour. There is also no special technique needed to mix the ingredients. They are all put together in the same way as a regular cookie dough.

To homogenize the ingredients it is important that the butter is soft (be careful: not melted!) and the almonds finely ground either ready-made or ground at home. You can also use a pinch of almond essence to bring out even more of that delicious almond flavor.
