I'd love to tell you that roast beef po' boys and I have a lifelong love affair. It would be amazing to read if my first experience with them was when my mother (a native New Orleans native of course) bathed me in thick garlic sauce when I was just a little kid with a penchant for alligator baiting. How amazing would it be if I had even spent my middle school years carving up a juicy tender roast beef at Parasol's house from what is reportedly the best roast beef po' boy in the world? I'd love to tell you all this but the truth is the first roast beef po' boy I ever had—the first po' boy actually—was only a few weeks ago on the last leg of a two-weekend tour of southern Louisiana and New Orleans. But honestly one bite of that dripping messy juicy braised meat is all you really need to feel like you've been enjoying it your whole life.
*I mean two weekends not two weeks (I came back to New York halfway through).
