Why You Should Roast Fennel
Fennel is a wonderfully versatile vegetable. It looks like a peeled onion bulb that someone has pressed between their hands so that it is no longer round with a green stalk that resembles celery and dill-like leaves.
It has the cool crunch of celery with a strong note of licorice when you bite into it. It is deliciously thinly sliced and served with parmesan in a salad that is delicious and filling in a cheese gratin and absolutely delicious toasted.
Roasted fennel caramelizes at the edges and loses its crispness. The licorice notes that were so distinct when the fennel was raw remain only when roasted. Even people who shy away from anything licorice (like my father) easily enjoy fennel when it is warm and roasted.
