Have you come across the “Kabocha” squash at the market? It is a Japanese variety of winter squash one that is heavy and thick-fleshed similar to butternut squash but with a deep rich flavor.

Usually the outer skin is dark green but some varieties are also sunset orange or red.

My friend Kori gave me a kabocha squash this week a big beautiful red one that she grew in her garden. I had seen several of them peeking out from under the clutter of sprawling vines and squash leaves when I visited her a while back.
