This 30 minute veggie bowl was inspired by farmers market produce and the wonderful CSA we received this year! I have found an abundance of vegetables and love them but I don't always know what to do with them.
My easy fix? Roasting. Roasting vegetables makes them easier to digest enhances their flavor and takes them to a whole new level of deliciousness. So we start with carrots beets radishes potatoes and sweet potatoes all tossed in sea salt oil (or water) and curry powder.
