I came up with this pasta sauce while working in the pasta department of the Grange restaurant in Sacramento for chef Michael Tuohy recently.
It’s a Spanish-inspired sauce of roasted red peppers lots of garlic and a hint of sage. It’s similar to the flavors of my favorite game stew a dish from the Spanish region of Aragon called chilindron.
