This roasted red pepper soup recipe is light and filling yet creamy and delicious – just what you need if you ate too many cookies this weekend. Plus I think the red pepper soup and green herbs look so festive! If you didn’t get a tree this year (or are tired of decorating cookies) you can decorate your soup! 🙂

Since red bell peppers aren’t in season I use roasted red bell peppers from a jar a super handy pantry staple. If you’re making this soup in the summer or fall roast them yourself! Fresh carrots fennel and thyme complement the peppers’ spicy flavor. Cannellini beans add creaminess to the soup without the need for heavy cream or nuts and balsamic vinegar rounds out the rich flavor.

This Roasted Red Pepper Soup recipe is an old favorite – it’s on page 203 of our first cookbook and (shameless advertising!) makes a great gift. I’ve made only a few minor adjustments to the original recipe which are listed below. To contrast the smooth texture of this soup I’ve added chopped roasted red peppers and extra spices. It’s a small detail but the roughly chopped peppers give it a nice texture – a few croutons or roasted chickpeas on top would also be a nice addition for crunch!
