My girlfriend's mother has been feeling unwell lately. I wanted to do something for her but since she lives in England and I live in Australia it's hard to make her a nice bowl of warming comfort soup. I thought the next best thing would be to write her a recipe for a nice soup.

Sweet Potato Soup (Maximum Flavor Minimum Effort)

The beauty of this soup is that it provides comfort without the usual 'comfort' ingredients like butter and cream which frankly probably don't do much to help someone overcome an illness.

This soup is actually comfort and health all in one. Thanks to the much lower glycemic index of the sweet potato compared to regular potato you won't experience the inevitable blood sugar spike and subsequent crash of many energy-packed winter meals.

Add to that ginger’s excellent digestive aid properties and your body can use the energy to focus on healing instead of digestion. Then add the ultimate comfort spice – cinnamon – and hopefully your soul will thank you for making this soup for dinner tonight too.
