If I could eat this for lunch every day forever I'd be a happy girl.
It’s just hard to go wrong with roasted vegetables – and I mean the kind where they’re salted oiled and browned to such delicious perfection that you REALLY enjoy eating them straight from the pan. But we don’t stop there. I like to throw a few slices of avocado on the plate maybe slice open a soft-boiled egg and drizzle a green tahini sauce over them.
