I was on the first flight of the day from Paris to Marrakech. A full plane heading southwest three hours from take-off to take-off. I’m not sure if it’s just this time of year but when you look out of the window on final approach into Aéroport Marrakech Ménara you’re awash in pink. The angular buildings the desert the soft winter sunlight filtering through the dusty landscape – it’s all based on salmon shades of earthy pink. And you’re greeted with a thousand subtle variations of it. This was my first impression of Marrakech and it stayed with me the entire week I was there. I’m home now unpacking but I wanted to share a few snaps and a Moroccan mint-roasted vegetable dish I threw together when I got home – potatoes cauliflower radishes with a hint of cumin mint cinnamon and ginger.
