Salade Niçoise originated in Nice (like ratatouille) but has become a French staple eaten all over the country. It is a very colorful dish which is what it is known for with tuna steak or anchovies along with tomatoes hard-boiled eggs onions black olives and a few types of greens that vary depending on the season.
