Remember those retro fish shapes?
I have two of them both of which I have been using for years to make this salmon mousse but no matter how hard I try it is almost impossible to make salmon mousse in a fish shape look good.
These days I take the easy way out and just pour the mousse mixture into serving dishes let it cool until it’s set and serve. This doesn’t mean the fish molds are retired I just have to face a challenge when I use them again.
