My devotion to peanut butter and all the ways we throw it at chocolate is impossible to question. From peanut butter cookies with more peanut butter and chocolate chips peanut butter filled chocolate chip cookies peanut butter and chocolate cakes pies ice cream and cheesecakes to peanut butter rolled brownies peanut butter blondies with chocolate chips it should come as no surprise that I also have a favorite Reese's peanut butter cup mold (egg as if that was ever up for debate). My peanut devotion isn't limited to peanut butter or its proximity to chocolate though and so when we ended up at Houseman's for dinner a few weeks ago we tried the salted peanut pie with sour cream for dessert and I haven't been able to stop thinking about it ever since.

It turns out it’s not just me. It’s “like pecan pie without all the goo” Pete Wells wrote in the New York Times . Tejal Rao described it as “a perfectly down-to-earth number with a crunchy pastry full of real peanuts and very little of anything else” for Bloomberg . And Scott Lynch said “this gooey crunchy buttery beauty is like the peanut butter crunch of your dreams and the whipped fluffy dollop of sour cream adds an unexpected and very welcome kick to the party” on Gothamist .

Because my priorities are in order this was the first thing I made when I got home. This isn’t official — I didn’t call the restaurant to beg for the recipe or anything. I like to recreate things the way I remember them even if they’re not perfect. I remembered a good toasted caramel (I’m using brown butter dark brown sugar and golden syrup or honey here) like a pecan pie would have but much less gooey (a higher concentration of nuts in the filling does the trick); a thin crisp cookie-like crust with a hint of vanilla (here we make it quick and press it in); and as strange as the dollop of sour cream to finish sounds (not sweetened though you could if you wanted) the chocolate and peanut butter here are harmonious and complementary in a way that no other topping could possibly match.
