Oaxacan cuisine: the birthplace of Mexican cuisine
It is the original Tex-Mex city with two cultures that define its character: the language the architecture the entertainment and the food.
Originally Mexico was home to large numbers of settlers from the United States in the early 1800s followed by thousands of meat-loving Germans who added their own gastronomic favorites to the region’s diet: meat and dairy. And as a major cattle center at the time at the start of the Chisholm Trail the ingredients were readily available.
Together with the native Mexican corn beans squash and chili peppers this combination created what we know today as Tex-Mex.
