French sauces are a lot like the pantheon of ancient Greek gods. There are the big ones like béchamel and hollandaise Zeus and Hera and then the hierarchy descends. But that hierarchy doesn’t imply absolute superiority in every way. I’d rather hang out with Dionysus and Pan than Zeus and Hera. I think we’d all agree for example that we’d be better off if Irene the goddess of peace got a little more attention from the world. And if we’re talking about sauces I’d argue that gribiche is ready for a much bigger spotlight.
