Many recipes with scallops drown them in rich sauces. I find this a bit of a shame because rich sauces are best reserved for flavorless textureless seafood which a nice fresh scallop is definitely not.

This scallop recipe is very simple to prepare and although it has some strong flavors the scallop is the star of the show.
I usually use the Queensland scallops as I find them to be the perfect size and have a lovely sweetness from the ocean. Of course if you are not in Australia this variety can be hard to find but find a fishmonger you trust and ask them what they recommend.
