Cock-a-Leekie Soup – Scottish Chicken Soup – Food Wishes

This amazing Scottish chicken soup is probably best known for its very entertaining name but it is so much more than that. Thanks to the copious amounts of leeks and a you’ll-never-guess secret ingredient this is one of the most hearty and delicious soups you’ll ever taste. I mean they wouldn’t just pick a random soup to be Scotland’s national soup would they?

In case you’re unfamiliar with leeks they’re very high in glutamate which translates to tons of savory goodness. And when you combine that with a rich freshly made chicken stock you get a soup that’s way too satisfying. And thanks to a few dried plums or as the over-40s call them “prunes” this soup has a subtle semi-mysterious sweetness in the background that really brings it all together.

If you have the time I highly recommend returning the bones and scraps to the simmering broth after you’ve pulled the meat. After you’ve simmered the whole chicken until it’s cooked through the broth will be delicious but there’s still a fair amount of flavor in the bones most of which will be released in the broth after another hour.
