This is a delicious light creamy egg dish. The chopped parsley gives it a great color! If you can't find crème fraîche at the grocery store mix 1 tablespoon of buttermilk with 1 cup of heavy cream. Stir together and pour into a jar. Tightly seal the lid and let sit for 5-8 hours. This will keep in the refrigerator for 10-14 days.
