When I announced I was making a fennel parmesan salad my dad said something like “That sounds like something for ‘ladies who lunch.’” (Is that still a thing?) For anyone who “lunches” this shaved fennel salad hits the spot: nice and crunchy and savory.
It may seem like an odd choice to pair Parmesan with fennel but the combination works well. The fennel retains its crunch even when thinly sliced and its licorice-like flavor complements the warm salty cheesy savoriness of the Parmesan beautifully.
Thyme and parsley provide accents along with a simple dressing of olive oil and lemon.
