This is a recipe that has evolved over the last twenty years and I think it *finally* hits all the right notes that I love about a great Chinese chicken salad. Specifically it’s a vegetarian take on what I consider to be the great Chinese chicken salads of my childhood circa 80s. This version has all my favorite ingredients – the awesome super strong spicy mustard & sesame soy dressing the pile-it-on approach of cilantro the scallions and toasted nuts. And with this version you introduce a kind of alternative protein (or plant-based chicken). The whole thing comes together in a fluffy pile of deliciousness.
