Here is a simple and easy shrimp pasta salad! Fresh basil red bell pepper red onion and a lemon olive oil dressing with a sprinkle of red chili flakes go so well with this shrimp pasta. You can put this whole salad together in the time it takes to heat the pasta water and cook the pasta.
Any small cooked peeled shrimp will work. If available the best shrimp for this salad are the small Maine "pink shrimp" (so called because they are pink even when raw). Frozen cooked shrimp work well for this recipe because all you have to do is soak them in cold water for a few minutes to thaw and the salad will be served chilled.
We have made this salad several times most recently for a potluck where it was a huge success. If you are taking it to an outdoor gathering keep it refrigerated.
