Every time I make this I am amazed at how good it is and wonder why I don't make it every night. I always get rave reviews for this simple salad. If you remove the seeds and membranes from the chilies there is essentially no heat.

Black-eyed pea salad
2 cans (425 grams) black-eyed peas drained and rinsed
1 small red onion diced
2 jalapeno peppers deseeded and finely chopped
