This simple citrusy relish was inspired by the Vegan Bowl at Teote — a Latin restaurant we love in Portland Oregon. I’ve shared my thoughts on the bowl itself here . But there was something missing: the mysteriously delicious and addictive beet relish.

Simple Roasted Beet Relish | Minimalist Baking Recipes

I don’t know exactly how they make it at Teote but my taste buds tell me I’ve figured it out pretty well for you all. And it only requires 6 simple ingredients! We’ll show you how!

The concept is simple: cubed beets are tossed in salt and smoky cumin then roasted until soft and lightly caramelized sweetening them and toning down some of the earthiness.

Then we add a little lime zest and juice for acidity and brightness and a touch of maple syrup to enhance the natural sweetness of the beets. Mix it all together and you have a delicious relish on your hands.
