Simple Traditional Irish Champion Recipe

Champ was originally made with nettles instead of green onions but over the years onions have become the standard. The spring onions add a nice flavor to the dish and the green leaves decorate the top. For the best possible texture fluffy potatoes such as russets are best for this dish. Avoid waxy potatoes such as Yukon golds and red potatoes. If you are using leftover boiled potatoes reheat them with the butter and milk and mash them.

Champ is a great side dish that can be served as is or treated as a bubble and squeak with a soft-fried egg on top. Serve with roast beef sausages bacon or other vegetables such as cabbage. A little gravy on the side is a nice touch.

"Buttery and creamy with a nice sharp bite from the green onion these potatoes are truly delicious and live up to their name 'easy.'" —Melissa Gray
