1-Pot Vegan Tortilla Soup | Minimalist Bakery Recipes
One of my main goals was to perfect a (vegan) chicken broth-like tortilla soup with vegetables and jackfruit. I assume you see where this is going? Let's make soup friends.
Tortilla soup (also known as sopa azteca) is said to have originated in or near Mexico City. Traditionally it is made with chicken broth roasted tomatoes onions garlic chili peppers and tortillas.
Our plant-based version is untraditional and uses jackfruit and vegetable stock instead of chicken. For a more traditional version of sopa azteca check out this recipe (non-vegan) from La Piña and La Cocina.
