Slow Cooker Fiesta Chicken and Rice Casserole
I usually think of using my slow cooker in the winter for a roast or stew or maybe some pulled pork. But I also find it quite handy in the summer as a way to avoid the oven and not heat up the kitchen.
This chicken and rice casserole recipe is designed for a slow cooker. You cook onions and chicken thighs in a slow cooker with basmati rice tomatoes and broth. Two hours later it's ready!
The spices we use are a touch Middle Eastern inspired with ground cumin and a touch of cinnamon. It really is a great combination. If you haven't tried it yet I highly recommend it.
