A Cuban style pork roast is marinated and cooked low and slow. Bitter oranges are normally used but they are hard to find. For simplicity I substituted limes and oranges for both the juice and zest. Serve with black beans and white rice for a complete meal. Plan ahead as this roast is marinated for 6 hours to overnight.
