How to place oven racks with Caroline Manzo – and what is grilling?

For example the top rack is the warmest spot in the oven and receives heat from above. This makes it the ideal location for dishes that require a brown or crispy top. On the other hand the third rack is closest to the heating element at the bottom of the oven so use it if you want to develop a crispy bottom crust on a dish. And finally there is the middle rack. This is the most used rack in the oven because it provides an even cooking environment that is ideal for cooking most dishes.

Fortunately you don’t have to remember which dishes go best with which rack positions. Just understand how the oven works and you’ll be able to make good decisions about what goes where even if you’re cooking a dish for the first time.

The biggest factor that determines the position of the oven rack is the oven's heat source and the rack's proximity to the heat source. Most ovens have two heating elements: one on top and one on the bottom. When you preheat the oven both elements produce heat to increase the internal temperature.
