This is another of the quick lunches I recently threw together at the Quitokeeto studio. It’s incredibly simple and like many noodle dishes unusually satisfying. I toss soba noodles with dollops of crème fraîche and sprinkle the mess with lots of chives and a grated hard-boiled egg yolk. A little green salad on the side dressed with a little good olive oil and salt—it’s A+. I’ve posted the recipe here .
