One of the things my mom used to make for me as a kid was these fried bananas covered in condensed milk. For my banana bread riff I really wanted to play with this idea. The combination of dulce de leche and bananas is so delicious and so nostalgic to me!
Adding dulce de leche to the batter was a natural choice because the dulce de leche does double duty: it provides the rich creamy milky notes and it also provides the caramelized notes that pair so well with the crunchy cinnamon streusel that graces the top of the bread.
